South African rusks are a traditional, crunchy, twice-baked biscuit that’s somewhere between a bread and a cookie — but much harder and designed to be dunked in a hot drink.

 

They’re deeply woven into South African food culture, often eaten at breakfast or as a snack with coffee, tea, or rooibos. The texture is deliberately very dry so they can be stored for long periods without going stale — a legacy of their origins as a travel food for pioneers and farmers (like the Voortrekkers) who needed something nourishing and portable.
